It is worth checking out the plum harvest to make this delicious treat.
Collect around 1kg plums (under-ripe ones are best). Wash these thoroughly discarding ones which are damaged – no need to de-stone them. Place them in a thick-bottomed pan with just under half a pint of mulled wine (or red wine – if you use red wine, sprinkle with nutmeg, cloves, cinnamon etc to your taste). Add the same weight of sugar as you have in plums. Bring to the boil, then turn the heat low. Stir from time to time. Prepare approx 4 jam jars – wash, dry and heat in a low oven or microwave. When the plums are softening, use a potato masher to break them down. Stir to prevent sticking. When your spoon is sticky, the jam is finished. Sieve through a colander into a pan over a low heat, using your potato masher to press out the juice. Discard the skin, stones etc. Pour the hot jam into the hot jars and tighten the lids.
Enjoy with your morning toast, or as a special treat on scones with whipped cream!
